Chicken, Cheddar, Broccoli, and Rice Casserole -Bonus Recipe!

Everyone needs a good Chicken, Cheddar, Broccoli, and Rice Casserole! This recipe is simplified when you use your Creamy Chicken and Noodles Recipe, without the noodles and cream! We can't wait to see you make this at home!


Ingredients


10 cups Creamy Chicken and Noodles ( before adding the egg noodles, heavy cream, or additional salted butter)

1 ½ Cups Long Grain White Rice

4 Cups Chopped Fresh Broccoli

7 Cups Freshly Shredded Medium or Sharp Cheddar

2 TBS Salted Butter

4 oz. Cream Cheese

½ tsp Salt

½ tsp Black Pepper

10-12 Ritz, Townhouse, or Club Crackers, crushed


Instructions:


Pre Prep: Chop broccoli, shred cheddar, butter a 9X13 casserole dish.


Bring your Chicken Noodle Soup Base to a boil in a large pot then add your fresh broccoli and rice and boil for 20-25 minutes until rice and broccoli is tender but not hard.


Once your broccoli and rice is cooked thoroughly, add your cream cheese, 4 cups of shredded cheddar, butter, and salt and pepper to taste.


Place your warm casserole filling into your prepared casserole dish, top with crushed crackers and remaining 2 cups of cheese. Then bake in the oven at 375 degrees F for 20-25 minutes until it bubbles and the cheese is golden brown.


We like to garnish our servings with a dollop of sour cream!



Notes:


You will make the Creamy Chicken and Noodles recipe from your FALL 2020 Cookbook almost to its entirety, with the chicken, vegetable roux, and seasonings. However, you do not want to add the noodles, heavy cream, or butter.


When measuring out the Chicken Noodle Soup Base for this recipe, you want to have an even amount of chicken and veggies to broth. We found alternating ladles of mostly chicken

with ladles of mostly broth, worked great.


We love the simplicity of this dish but when we make it again, we'll experiment with other cheeses like Parmesan, Pecorino Romano, White Cheddar, or Gouda. If you beat us to it, let us know what other cheeses you liked!


You can use frozen broccoli, but we think fresh broccoli tastes much better.


We also like to use crushed garlic and herb croutons as a topping in place of the crackers from time to time.
